Whiskey Shots: A Review of Ironroot Harbinger 115 Proof Straight Bourbon Whiskey

Ironroot Republic Distillery, a family-owned and operated craft distillery, is nestled in Denison, Texas. Brothers Jonathan and Robert Likarish founded Ironroot Republic with a commitment to crafting exceptional spirits that encapsulate the unique flavors of the Lone Star State. Their focus on locally sourced ingredients and traditional distilling methods has resulted in award-winning whiskies, gins, and liqueurs that embody the spirit of Texas. Their passion for distilling, coupled with a dedication to quality, has swiftly earned Ironroot Republic Distillery a reputation as one of the country's top craft distilleries.


Last weekend, I had the delightful opportunity to participate in a "takeover" of the distillery. We were treated to a comprehensive tour, including a few barrel samples and a tasting of several of their exquisite bourbons, including this Harbinger 115 proof. This bourbon was a 2020 winner of the “World’s Best Bourbon” at the World Whiskies Awards, an impressive feat for such a young and non-Kentucky distillery.


I recently reviewed their Harbinger XC, a 90 proof offering. So, how does the 115 proof compare?


Ironroot Harbinger 115 is a bourbon that truly sets itself apart in its category. The alluring dark caramel color and the long, evenly-spaced legs in the glass hint at the spirit's high quality. The aroma is a delightful mix of caramel, plum, and apple pie with a hint of cinnamon, creating a warm and inviting scent.


The flavor profile is a journey, starting with a mildly viscous mouthfeel and a sweet caramel note. This transitions into a dried fruit flavor, more plum than raisin, before moving into oak and a mild earthiness.

The finish is long and oaky, with a lingering cinnamon note that leaves you wanting more.


Despite its high proof, this bourbon drinks a bit under, making it a smooth and enjoyable experience. The oakiness is surprising given its relatively short time in the barrel, but this is likely due to the Texas sun and the use of heirloom corn varieties.


In conclusion, Ironroot Harbinger 115 is a top-shelf bourbon that showcases the best of what Texas has to offer. It's a fine example of a Texas bourbon and one that I would highly recommend to any bourbon enthusiast.
