From the website:

"At Proof & Wood Ventures, Inc., we invest in and develop spirits brands, and age our own spirits. Our core business is sourcing and bottling fine American whiskies, but we also import other high-quality spirits from around the world that were not available in the US previously. Founder Dave Schmier is delighted to be able to create both cocktail-friendly bottlings for value-focused bartenders and high-end collectors’ editions for connoisseurs.

Our name comes from the two things we control as a blender and finisher of fine spirits, and the two things that are incredibly important to any spirit’s flavor: the proof it’s bottled at, and the wood of the barrel we age it in."

I recently had the pleasure of indulging in The Representative Barrel Proof Straight Bourbon Whiskey, a bottle that had piqued my interest for quite some time before I finally stumbled upon it a couple of weeks ago.

Nose

On the nose, this bourbon offers a rich blend of caramel, cherry, oak, and a subtle hint of orange peel, creating a complex and inviting aroma.

Palate

The palate delivers a delightful experience with flavors of caramel-covered peanuts that gracefully transition into a burst of orange zest. This citrusy brightness is enhanced by a touch of cinnamon and a dry oakiness, adding depth to the whiskey.

Finish

The finish is impressively long and oaky, leaving behind a lingering nuttiness that is perfectly balanced by a sweet and satisfying conclusion.

Overall, The Representative Barrel Proof Straight Bourbon Whiskey proved to be a captivating and multi-dimensional spirit. Each sip revealed new layers of flavor and complexity, making it a truly enjoyable journey. I highly recommend this whiskey and give it a rating of 4.4 out of 5 stars for its exceptional quality and depth of character. Here's to a great sip! Cheers!
